The Culinary Experience: June 2012
Learn the secrets of preparing and enjoying deliciously healthy food and take part of the Lake Austin Spa Resort experience home with you! Join us June 11-17, 2012 with special guest chefs Rebecca Lang, Beth Pav and Casey Thompson.
Monday, June 11
Special Guest Chef: Rebecca LangRebecca Lang is a cookbook author, cooking instructor, and food writer. Her newest book, Quick-Fix Southern (Andrews McMeel), was released in March 2011. She is also the author Southern Entertaining for a New Generation (Cumberland House 2004) and Mary Mac’s Tea Room (Looking Glass Books 2005). As a Contributing Editor for Southern Living, Rebecca is featured in weekly cooking segments on the nationally syndicated show “Daytime.” She is also a Contributing Editor for myrecipes.com and writes a monthly column, “Girls’ Night In,” for the site.
Rebecca edited cookbooks as an assistant food editor for Oxmoor House. She is a former apprentice of Nathalie Dupree and is a graduate of The University of Georgia. She also earned a culinary arts degree from Johnson and Wales University. Rebecca is a member of Les Dames d’Escoffier, Georgia Organics, Southern Foodways, and IACP.

Cooking Session
With Guest Chef: Beth Pav
Beth Vlasich Pav is owner/chef of Cooking by Design Culinary Studio located in the Texas Hill Country. She has been a professional cook, culinary educator, and writer of all things food for over fifteen years. Beth’s food articles and recipes have been published in print and on-line media. In her free time, Beth is a guest chef and speaker for regional news programs, wineries and fundraising & philanthropic events. In addition, she has been a guest conference speaker for the International Association of Culinary Professionals.
Beth was a founding member and has served on the board & as President of Les Dames d’ Escoffier member-Austin Chapter. She is also a member of IACP (International Assoc. of Culinary Professionals) and is a certified Jazzercise instructor.Beth is currently working on her blog www.bethsgoodfood.com and a new cookbook series. Her company was awarded Best Service/Caterer by the Lake Travis View: Lake and Country Living 2005.

Cooking Session with Special Guest Chef: Casey ThompsonAs a finalist on Bravo TV’s “Top Chef” Season 3, Chef Casey not only won America’s heart by being voted America’s favorite, but she also showed the culinary world that she can take the heat and keep cooking amongst some of the most-revered chefs. Winning over critical chefs including Eric Ripert and Anthony Bourdain with her tasteful creations, often prepared with little time and equipment, Casey made herself a star on the ever-popular culinary scene. In 2010, Thompson returned to “Top Chef” to compete against an all-star cast in New York City in Season 8 of “Top Chef All-Stars.”
Learning from celebrity chef Dean Fearing, Thompson worked her way up from prep cook to sous chef before accepting the executive chef position at one of Dallas’ most popular Asian restaurants, Shinsei. Thompson has spent time in San Francisco and traveled throughout the world learning techniques and presentations. She is also known for her talent of pairing the perfect wine with every dish and has worked with many well known wineries. In 2010, Thompson returned to Texas to serve as executive chef of Brownstone Restaurant & Lounge in Fort Worth and also serves as the spokesperson for Terrazas wine, a brand of Moet-Hennessey. She is a seafood ambassador with Monterey Bay Aquarium and serves as a culinary ambassador for the Bay Area Red Cross. Thompson also participates in national culinary events and festivals throughout the country and appears regularly on morning television shows in both San Francisco and Dallas.
